  • 1/4 cup powdered sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk

  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp dairy-free butter (optional for richness)

For the Topping:

  • 2 cups fresh strawberries, hulled and sliced
  • 1–2 tbsp apricot jam or glaze (optional, for shine)

Instructions

1. Make the Tart Crust:

  • Preheat oven to 350°F (175°C).
  • In a bowl, combine flour, powdered sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  • Add egg yolk and cold water, mix until dough forms. Chill 30 minutes.
  • Roll out dough and fit into a 9-inch tart pan. Prick base with a fork.
  • Bake for 15–20 minutes until lightly golden. Let cool.

2. Prepare the Pastry Cream:

  • In a saucepan, heat milk until just simmering.
  • In a separate bowl, whisk egg yolks, sugar, and cornstarch until smooth.
  • Slowly pour hot milk into egg mixture, whisking constantly. Return to saucepan.
  • Cook over medium heat until thickened, stirring constantly.
  • Remove from heat, stir in vanilla and butter (if using). Cool slightly.

3. Assemble the Tart:

  • Spread pastry cream evenly in the cooled tart shell.
  • Arrange sliced strawberries on top in a decorative pattern.

4. Glaze (Optional):

  • Warm apricot jam slightly and brush over strawberries for a shiny finish.

5. Serve:

  • Chill tart for at least 1 hour before serving.
  • Slice and enjoy fresh!

Tips for the Best Strawberry Tart

  • Use fresh, ripe strawberries for maximum sweetness and color.

Variations

  • Vegan: Use plant-based milk, coconut cream, and vegan butter for the crust.
  • Berry mix: Combine strawberries with blueberries or raspberries.
  • Chocolate twist: Add a thin layer of melted dark chocolate on the tart shell before adding pastry cream.
