4 slices sturdy sourdough or artisan bread
2 tbsp butter or mayo
3–4 tbsp basil pesto
1 cup shredded mozzarella or provolone
Optional: sliced tomato, spinach, sun-dried tomatoes
Spread butter/mayo on one side of each bread slice.
Spread pesto on the inside of two slices.
Add cheese (and optional fillings), then top with second slice (butter side out).
Toast on medium-low heat for 3–4 mins per side until golden and melty.
Let rest 1 min, slice, and serve hot.
Use vegan cheese and pesto for a plant-based version.
Air fry option: 375°F for 6–8 minutes.
