Chicken and Broccoli features tender stir-fried chicken and crisp broccoli coated in a savory garlic soy sauce.
1 pound boneless skinless chicken breasts sliced thin
3 cups broccoli florets
2 tablespoons vegetable oil divided
3 cloves garlic minced
1 quarter cup low-sodium soy sauce
1 half cup chicken broth
1 tablespoon brown sugar
2 teaspoons cornstarch divided
1 teaspoon sesame oil
Salt and black pepper to taste
Toss sliced chicken with 1 tablespoon cornstarch, salt, and pepper.
Whisk soy sauce, broth, brown sugar, sesame oil, and remaining cornstarch.
Heat oil in skillet and cook chicken 4 to 5 minutes until nearly done. Remove.
Sauté garlic briefly, then add broccoli and cook 3 to 4 minutes.
Return chicken to pan and pour in sauce.
Cook until sauce thickens and chicken reaches 165 degrees Fahrenheit.
Serve immediately.
