Chili Lime Chicken features tender marinated chicken infused with fresh lime, garlic, and warm chili spices, grilled or baked until juicy and flavorful.
2 pounds boneless skinless chicken thighs or breasts
3 tablespoons olive oil
Juice of 2 limes
1 teaspoon lime zest
3 cloves garlic minced
2 teaspoons chili powder
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 tablespoon honey
1 teaspoon salt
1 half teaspoon black pepper
2 tablespoons chopped fresh cilantro
Whisk olive oil, lime juice, zest, garlic, chili powder, paprika, cumin, honey, salt, and pepper.
Coat chicken thoroughly and marinate 30 minutes to 8 hours.
Preheat grill to 400 degrees Fahrenheit or oven to 425 degrees Fahrenheit.
Cook chicken 5 to 7 minutes per side on grill or 18 to 22 minutes in oven until internal temperature reaches 165 degrees Fahrenheit.
Rest 5 minutes before slicing.
Garnish with cilantro and serve with lime wedges.
Do not marinate longer than 8 hours. Adjust spice level with cayenne if desired.
