Perfectly crispy on the outside and tender inside, these oven-baked sweet potato fries are a wholesome, crowd-pleasing side with simple ingredients and bold flavor.
2 large sweet potatoes, peeled or scrubbed
1½ tbsp cornstarch
2 tbsp avocado or canola oil
1 tsp kosher salt
½ tsp garlic powder
½ tsp smoked paprika
¼ tsp black pepper (optional)
Preheat oven to 425°F. Place baking sheets inside to heat.
Cut sweet potatoes into ¼-inch matchsticks. Soak in cold water for 30 minutes (optional). Drain and dry completely.
Toss fries with cornstarch, then oil, then seasonings.
Spread on hot baking sheets in a single layer.
Bake 15 minutes, flip, then bake 12–15 more minutes until golden and crispy.
Rest 5 minutes, sprinkle with salt, and serve hot.
