A rich, hearty crockpot soup loaded with tender potatoes, ground beef, vegetables, and a creamy broth. The perfect hands-off comfort meal for chilly days.

Ingredients

  • 1 lb ground beef

  • 45 medium potatoes, peeled and diced

  • 1 onion, diced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 4 cups beef broth

  • 1½ cups heavy cream or half-and-half

  • 1 cup shredded cheddar (optional)

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp paprika

  • 1 tbsp Worcestershire sauce (optional)

Instructions

  • Brown beef in a skillet. Drain and transfer to crockpot.

  • Add potatoes, onion, carrots, and celery.

  • Pour in broth and add seasonings.

  • Cook on LOW for 6–8 hours or HIGH for 3–4 hours, until potatoes are tender.

  • Stir in cream and cheese (if using) during the last 30 minutes.

  • Adjust seasoning, garnish, and serve warm.

Notes

  • Use cornstarch slurry to thicken if desired.

  • Customize with extra veggies or meat alternatives.

  • Store up to 4 days or freeze (before cream added).
