A rich and comforting one-pot creamy lasagna soup with tender noodles, hearty meat, and melty cheese — all the flavors of lasagna in a cozy bowl.

Ingredients

  • 1 lb ground beef or Italian sausage

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 4 cloves garlic, minced

  • 1 (28 oz) can crushed tomatoes

  • 4 cups chicken or beef broth

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

  • 8 oz lasagna noodles, broken into pieces

  • ¾ cup heavy cream

  • 1½ cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • Fresh parsley and ricotta for topping (optional)

Instructions

  • In a large pot, sauté onion in olive oil until soft. Add garlic and cook 1 minute.

  • Add ground meat and cook until browned. Drain excess fat.

  • Stir in crushed tomatoes, broth, seasoning, salt, and pepper. Bring to a boil.

  • Add broken lasagna noodles and simmer 10–12 minutes, stirring occasionally.

  • Stir in cream and mozzarella. Simmer 2–3 minutes until melted and creamy.

  • Stir in Parmesan and parsley. Serve hot with a dollop of ricotta if desired.

Notes

  • Add red pepper flakes for heat.

  • Use gluten-free pasta as needed.

  • Great for meal prep and reheats well.
