A rich and comforting one-pot creamy lasagna soup with tender noodles, hearty meat, and melty cheese — all the flavors of lasagna in a cozy bowl.
1 lb ground beef or Italian sausage
1 tbsp olive oil
1 small onion, diced
4 cloves garlic, minced
1 (28 oz) can crushed tomatoes
4 cups chicken or beef broth
1 tsp Italian seasoning
Salt and pepper to taste
8 oz lasagna noodles, broken into pieces
¾ cup heavy cream
1½ cups shredded mozzarella cheese
½ cup grated Parmesan cheese
Fresh parsley and ricotta for topping (optional)
In a large pot, sauté onion in olive oil until soft. Add garlic and cook 1 minute.
Add ground meat and cook until browned. Drain excess fat.
Stir in crushed tomatoes, broth, seasoning, salt, and pepper. Bring to a boil.
Add broken lasagna noodles and simmer 10–12 minutes, stirring occasionally.
Stir in cream and mozzarella. Simmer 2–3 minutes until melted and creamy.
Stir in Parmesan and parsley. Serve hot with a dollop of ricotta if desired.
Add red pepper flakes for heat.
Use gluten-free pasta as needed.
