1 medium eggplant diced
2 zucchini sliced
1 red bell pepper chopped
1 yellow bell pepper chopped
3 ripe tomatoes chopped or 1 can crushed tomatoes
1 small onion diced
3 cloves garlic minced
3 tablespoons olive oil
1 teaspoon fresh thyme
1 bay leaf
2 tablespoons fresh basil chopped
Salt and black pepper to taste
Heat olive oil in a large pot over medium heat.
Sauté onion until soft, then add garlic.
Add eggplant and cook 5 minutes.
Stir in bell peppers and cook 3 to 4 minutes.
Add zucchini and tomatoes.
