A healthy, low-carb take on the classic burrito bowl — loaded with seasoned protein, cauliflower rice or greens, and all your favorite fresh toppings.

Ingredients

  • 1 lb ground beef or grilled chicken

  • 23 cups cauliflower rice or shredded lettuce

  • 1 tbsp olive oil

  • 23 tsp taco seasoning

  • 1 avocado, diced

  • 1 cup cherry tomatoes, halved

  • 1 bell pepper, sliced

  • 1/4 red onion, thinly sliced

  • 1/2 cup shredded cheese

  • 1/4 cup sour cream or Greek yogurt

  • 1/4 cup salsa or guacamole

  • Fresh cilantro, lime wedges

  • Optional: jalapeños, hot sauce

Instructions

  • Cook protein with taco seasoning until browned and flavorful.

  • Sauté cauliflower rice in oil until tender, or prep lettuce.

  • Chop vegetables and set out toppings.

  • Assemble bowls: base → protein → veggies → toppings.

  • Serve warm with lime and cilantro.

Notes

  • Use store-bought rotisserie chicken for a shortcut.

  • For spicy flavor, add hot sauce or chili flakes.

  • Keeps 3–4 days in the fridge.
