A hearty, flavorful steak and potato soup made with tender beef, soft potatoes, savory aromatics, and a rich broth — perfect for chilly nights and satisfying dinners.

Ingredients

  • lbs steak (sirloin or chuck), cubed

  • 1 tbsp olive oil + more as needed

  • 1 large onion, diced

  • 4 garlic cloves, minced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 34 medium potatoes, cubed

  • 2 tbsp tomato paste

  • 6 cups low-sodium beef broth

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried thyme or 2 sprigs fresh

  • 1 bay leaf

  • Salt & pepper to taste

  • Optional: ½ cup milk or cream, fresh parsley

  • 1½ lbs steak (sirloin or chuck), cubed

Notes

For thicker soup, mash some potatoes or add cornstarch slurry. Add extra veggies or make it dairy-free as desired.
