For the Meat:

  • 1 lb ground beef or turkey

  • 23 tbsp taco seasoning

  • 1 tbsp tomato paste or 1/4 cup salsa

  • Salt & pepper to taste

For the Rice:

  • 1 cup white or brown rice

  • 2 cups water or broth

  • Optional: 1 tbsp lime juice, 1/4 cup chopped cilantro

Toppings:

  • 1 cup black beans, drained

  • 1 cup corn

  • 1 cup chopped lettuce

  • 1 cup cherry tomatoes, halved

  • 1 avocado, diced

  • 1/2 cup shredded cheese

  • 1/4 cup sour cream or Greek yogurt

  • Jalapeños, lime wedges, cilantro (optional)

Instructions

  • Cook rice according to package directions. Stir in lime juice and cilantro if using.

  • Brown ground meat in a skillet. Add seasoning, tomato paste, and a splash of water. Simmer until thickened.

  • Prep all toppings while meat cooks.

  • Assemble bowls: rice base, taco meat, beans, veggies, and toppings.

  • Serve immediately or store for meal prep.
