For the Meat:
1 lb ground beef or turkey
2–3 tbsp taco seasoning
1 tbsp tomato paste or 1/4 cup salsa
Salt & pepper to taste
For the Rice:
1 cup white or brown rice
2 cups water or broth
Optional: 1 tbsp lime juice, 1/4 cup chopped cilantro
Toppings:
1 cup black beans, drained
1 cup corn
1 cup chopped lettuce
1 cup cherry tomatoes, halved
1 avocado, diced
1/2 cup shredded cheese
1/4 cup sour cream or Greek yogurt
Jalapeños, lime wedges, cilantro (optional)
Cook rice according to package directions. Stir in lime juice and cilantro if using.
Brown ground meat in a skillet. Add seasoning, tomato paste, and a splash of water. Simmer until thickened.
Prep all toppings while meat cooks.
Assemble bowls: rice base, taco meat, beans, veggies, and toppings.
