A moist and savory chicken meatloaf made with garlic, Parmesan cheese, and herbs, baked until golden and tender.

Ingredients

2 pounds ground chicken
3 cloves garlic minced
3 quarter cup grated Parmesan cheese divided
1 cup panko breadcrumbs
1 large egg
1 third cup milk
2 tablespoons chopped fresh parsley
1 teaspoon salt
1 half teaspoon black pepper
1 teaspoon Italian seasoning
1 tablespoon olive oil

Instructions

  • Preheat oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper.

  • Combine panko breadcrumbs and milk in a large bowl and let sit for several minutes.

  • Add ground chicken garlic 1 half cup Parmesan egg parsley salt pepper and Italian seasoning.

  • Mix gently until just combined.

  • Shape into a loaf and place on prepared baking sheet.

  • Brush with olive oil and sprinkle remaining Parmesan on top.

  • Bake 45 to 55 minutes until internal temperature reaches 165 degrees Fahrenheit.

  • Rest for 10 minutes before slicing and serving.

Notes

Do not overmix to keep the texture tender. Let the meatloaf rest before slicing to retain juices. Store leftovers refrigerated and reheat gently.
