This Garlic Parmesan Meatloaf is tender, juicy, and packed with bold flavor—featuring fresh garlic, shredded Parmesan, and a savory topping that crisps up perfectly in the oven.

Ingredients

  • 2 lbs ground beef (80/20)

  • ¾ cup breadcrumbs

  • ½ cup milk

  • 2 eggs

  • ½ cup shredded Parmesan cheese

  • 1 small onion, grated or finely chopped

  • 4 cloves garlic, minced

  • 1 tbsp Worcestershire sauce

  • 1 tsp salt

  • ½ tsp pepper

  • 1 tsp Italian seasoning

  • 2 tbsp chopped parsley (optional)

Topping:

  • ¼ cup grated Parmesan

  • 1 tbsp melted butter

  • 1 clove garlic, minced

Instructions

  • In a small bowl, soak breadcrumbs in milk for 5 minutes.

  • In a large bowl, combine beef, breadcrumb mixture, eggs, Parmesan, onion, garlic, Worcestershire, salt, pepper, and Italian seasoning. Mix until just combined.

  • Shape into a loaf on a lined sheet pan or place in a loaf pan.

  • Mix topping ingredients and spread over the loaf.

  • Bake at 375°F (190°C) for 50–60 minutes or until internal temp reaches 160°F (71°C).

  • Rest for 10 minutes before slicing.

Notes

For a glazed finish, spread ketchup over the top in the final 15 minutes. Store leftovers in the fridge up to 4 days.
