This Garlic Parmesan Meatloaf is tender, juicy, and packed with bold flavor—featuring fresh garlic, shredded Parmesan, and a savory topping that crisps up perfectly in the oven.
2 lbs ground beef (80/20)
¾ cup breadcrumbs
½ cup milk
2 eggs
½ cup shredded Parmesan cheese
1 small onion, grated or finely chopped
4 cloves garlic, minced
1 tbsp Worcestershire sauce
1 tsp salt
½ tsp pepper
1 tsp Italian seasoning
2 tbsp chopped parsley (optional)
Topping:
¼ cup grated Parmesan
1 tbsp melted butter
1 clove garlic, minced
In a small bowl, soak breadcrumbs in milk for 5 minutes.
In a large bowl, combine beef, breadcrumb mixture, eggs, Parmesan, onion, garlic, Worcestershire, salt, pepper, and Italian seasoning. Mix until just combined.
Shape into a loaf on a lined sheet pan or place in a loaf pan.
Mix topping ingredients and spread over the loaf.
Bake at 375°F (190°C) for 50–60 minutes or until internal temp reaches 160°F (71°C).
Rest for 10 minutes before slicing.
For a glazed finish, spread ketchup over the top in the final 15 minutes. Store leftovers in the fridge up to 4 days.
