A hearty and healthy one-pan ground turkey sweet potato bake with veggies, melty cheese, and warm spices. Perfect for weeknight dinners or meal prep.

  • 1 lb ground turkey

  • 2 medium sweet potatoes, peeled and diced

  • 1 bell pepper, diced

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tsp cumin

  • 1 tsp paprika

  • Salt & pepper, to taste

  • 1 cup baby spinach (optional)

  • 1½ cups shredded cheese (cheddar or Monterey Jack)

  • Fresh parsley for garnish (optional)

Instructions

  • Preheat oven to 400°F. Toss sweet potatoes with olive oil, salt, and pepper. Roast for 20–25 minutes.

  • In a skillet, cook onion and pepper for 4–5 minutes. Add garlic, cumin, paprika, then ground turkey. Cook until browned.

  • Stir in spinach (if using) until wilted. Season to taste.

  • Reduce oven to 375°F. In a 9×13 dish, combine roasted sweet potatoes and turkey mixture. Top with cheese.

  • Bake 15 minutes covered, then 10 minutes uncovered until bubbly.

  • Let cool slightly. Garnish and serve.

Notes

  • Add black beans, corn, or jalapeño for variation.

  • Use dairy-free cheese if needed.
