A hearty and healthy one-pan ground turkey sweet potato bake with veggies, melty cheese, and warm spices. Perfect for weeknight dinners or meal prep.
1 lb ground turkey
2 medium sweet potatoes, peeled and diced
1 bell pepper, diced
1 small onion, diced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp cumin
1 tsp paprika
Salt & pepper, to taste
1 cup baby spinach (optional)
1½ cups shredded cheese (cheddar or Monterey Jack)
Fresh parsley for garnish (optional)
Preheat oven to 400°F. Toss sweet potatoes with olive oil, salt, and pepper. Roast for 20–25 minutes.
In a skillet, cook onion and pepper for 4–5 minutes. Add garlic, cumin, paprika, then ground turkey. Cook until browned.
Stir in spinach (if using) until wilted. Season to taste.
Reduce oven to 375°F. In a 9×13 dish, combine roasted sweet potatoes and turkey mixture. Top with cheese.
Bake 15 minutes covered, then 10 minutes uncovered until bubbly.
Let cool slightly. Garnish and serve.
Add black beans, corn, or jalapeño for variation.
Use dairy-free cheese if needed.
