1 cup broccoli florets
1 zucchini sliced
1 red bell pepper sliced
1 carrot thinly sliced
1 half red onion sliced
2 cloves garlic minced
2 tablespoons olive oil
Salt and black pepper to taste
1 tablespoon fresh lemon juice optional
2 tablespoons chopped fresh parsley optional
Heat olive oil in a large skillet over medium-high heat.
Add carrots and broccoli and cook 3 to 4 minutes.
Add zucchini, bell pepper, and onion. Cook 4 to 5 minutes.
Stir in garlic and cook 1 minute.
Season with salt and pepper.
Finish with lemon juice and parsley if desired.
