Hearty Ground Beef and Potatoes is a comforting one-pan meal featuring tender potatoes, seasoned ground beef, and savory herbs cooked together until perfectly satisfying.

3 medium Yukon Gold potatoes peeled and cubed
1 tablespoon olive oil
1 small yellow onion diced
3 cloves garlic minced
1 teaspoon paprika
1/2 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup beef broth
2 tablespoons chopped fresh parsley optional

Instructions

  • Heat olive oil in large skillet over medium heat.

  • Add cubed potatoes and cook 8 to 10 minutes until lightly golden. Remove and set aside.

  • Brown ground beef in same skillet, breaking apart as it cooks.

  • Add diced onion and cook until softened.

  • Stir in garlic and cook 30 seconds.

  • Return potatoes to skillet and season with paprika, thyme, salt, and pepper.

  • Pour in beef broth, cover, and cook 10 to 15 minutes until potatoes are tender.

  • Remove lid for final minutes to allow slight crisping.

  • Garnish with parsley and serve hot.
