Hearty Ground Beef and Potatoes is a comforting one-pan meal featuring tender potatoes, seasoned ground beef, and savory herbs cooked together until perfectly satisfying.
1 pound ground beef
3 medium Yukon Gold potatoes peeled and cubed
1 tablespoon olive oil
1 small yellow onion diced
3 cloves garlic minced
1 teaspoon paprika
1/2 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup beef broth
2 tablespoons chopped fresh parsley optional
Heat olive oil in large skillet over medium heat.
Add cubed potatoes and cook 8 to 10 minutes until lightly golden. Remove and set aside.
Brown ground beef in same skillet, breaking apart as it cooks.
Add diced onion and cook until softened.
Stir in garlic and cook 30 seconds.
Return potatoes to skillet and season with paprika, thyme, salt, and pepper.
Pour in beef broth, cover, and cook 10 to 15 minutes until potatoes are tender.
Remove lid for final minutes to allow slight crisping.
Garnish with parsley and serve hot.
Cut potatoes evenly for consistent cooking. Avoid overcrowding pan to promote browning. Store leftovers in refrigerator up to four days.
