A crispy Tex-Mex classic made with golden tortillas, refried beans, taco meat, zesty sauce, and melty cheese — all baked into a delicious Mexican-style pizza.

Ingredients

  • 8 small flour tortillas (68 inch)

  • 1 lb ground beef or turkey

  • 1 packet taco seasoning (or homemade)

  • 1 tbsp oil for frying

  • 1 can refried beans (15 oz)

  • 1 cup enchilada or taco sauce

  • 1 1/2 cups shredded Mexican blend cheese

  • Optional toppings: diced tomatoes, olives, green onions, jalapeños, cilantro

Instructions

  • Brown meat in skillet. Drain fat. Add taco seasoning and a splash of water. Simmer until thick.

  • Fry tortillas in oil or bake until crispy.

  • Warm refried beans until spreadable.

  • On one tortilla, layer beans and meat. Top with another tortilla.

  • Spread sauce on top, then sprinkle with cheese and toppings.

  • Bake at 400°F for 8–10 minutes until bubbly.

  • Slice and serve with garnish if desired.

Notes

  • Vegetarian: Skip meat and add beans or veggies.

  • Make ahead: Assemble and refrigerate before baking.

  • Reheat in oven or skillet to keep crispy.
