1 large English cucumber (or 2 Persian cucumbers), sliced
1/4 red onion, thinly sliced (optional)
1 small jalapeño or red chili, finely chopped (optional)
2 tbsp fresh mint or cilantro, chopped
Dressing:
Juice of 1–2 limes
1 tsp olive oil or sesame oil (optional)
1/4 tsp chili flakes or Tajín
Pinch of salt
1/2 tsp maple syrup or honey (optional)
