Turtle Cookies

Turtle Cookies are a decadent treat inspired by the classic turtle candy — buttery cookies topped with caramel, toasted pecans, and chocolate. Every bite delivers a perfect balance of soft, chewy cookie, nutty crunch, gooey caramel, and rich chocolate. They’re ideal for holidays, gifting, or any time you need a show-stopping dessert.

Ingredients

For the Cookies:

  • 1 cup (230 g) unsalted butter, softened
  • 1 cup (200 g) brown sugar, packed
  • 1/2 cup (100 g) granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups (315 g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

For the Topping:

  • 1 cup (120 g) chopped pecans, toasted
  • 1 cup (200 g) packed brown sugar
  • 1/2 cup (115 g) unsalted butter
  • 1/4 cup (60 ml) heavy cream
  • 1 1/2 cups (255 g) semi-sweet chocolate chips

Instructions

1. Preheat Oven:
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. Make the Cookie Dough:
Cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in eggs one at a time, then add vanilla. In a separate bowl, whisk together flour, baking soda, and salt. Gradually fold into wet mixture until just combined.

3. Scoop & Bake:
Scoop 1.5-tablespoon portions of dough onto baking sheets, spacing about 2 inches apart. Bake for 10–12 minutes, until lightly golden at the edges. Cool slightly on the sheet.

4. Prepare Caramel Topping:
In a small saucepan, melt butter over medium heat. Stir in brown sugar and heavy cream. Bring to a boil, stirring constantly, and cook for 2–3 minutes until smooth and slightly thickened.

5. Assemble Turtle Cookies:
Spoon a small amount of warm caramel onto each cookie. Immediately sprinkle with toasted pecans and top with chocolate chips while caramel is still warm, allowing chocolate to melt slightly.

6. Cool & Set:
Let cookies cool completely on a wire rack. The caramel will firm up slightly as it cools, holding pecans and chocolate in place.
