  • 1 tbsp olive oil

  • 1 lb ground beef or Italian sausage

  • 1 small onion, diced

  • 3 garlic cloves, minced

  • 2 tbsp tomato paste

  • 1 can (28 oz) crushed tomatoes

  • 4 cups beef or chicken broth

  • 1 tsp Italian seasoning

  • ½ tsp salt

  • ¼ tsp pepper

  • 810 lasagna noodles, broken into pieces

  • ½ cup shredded mozzarella (optional)

  • ¼ cup grated Parmesan

  • Ricotta for topping

  • Fresh basil for garnish

Instructions

  • Heat oil in a large pot. Brown meat with onion. Drain excess fat.

  • Add garlic and tomato paste. Cook 1–2 minutes.

  • Stir in tomatoes, broth, seasoning, and bring to a boil.

  • Add noodles. Simmer 10–12 minutes, stirring occasionally.

  • Stir in cheeses or top each bowl with ricotta and garnish.

Notes

  • Add greens or mushrooms to boost nutrients.

  • Freeze soup without noodles for better texture.

  • Adjust spice to your taste with chili flakes.
