1 tbsp olive oil
1 lb ground beef or Italian sausage
1 small onion, diced
3 garlic cloves, minced
2 tbsp tomato paste
1 can (28 oz) crushed tomatoes
4 cups beef or chicken broth
1 tsp Italian seasoning
½ tsp salt
¼ tsp pepper
8–10 lasagna noodles, broken into pieces
½ cup shredded mozzarella (optional)
¼ cup grated Parmesan
Ricotta for topping

Heat oil in a large pot. Brown meat with onion. Drain excess fat.
Add garlic and tomato paste. Cook 1–2 minutes.
Stir in tomatoes, broth, seasoning, and bring to a boil.
Add noodles. Simmer 10–12 minutes, stirring occasionally.
Stir in cheeses or top each bowl with ricotta and garnish.

Freeze soup without noodles for better texture.
