Whenever my mother-in-law gets upset with me, baking these cookies always seem to cheer her up! I like to call these ‘Peacekeeper’ cookies!

Sometimes, all it takes is a warm, homemade cookie to smooth over a tense moment. That’s why these “Peacekeeper” Cookies” are my go-to whenever I want to bring a smile — especially for my mother-in-law! Soft, buttery, and lightly sweet, these cookies are simple to make, universally loved, and just the right balance of comfort and indulgence.


Ingredients

  • 1 cup (230 g) unsalted butter, softened
  • 1 cup (200 g) brown sugar, packed
  • 1/2 cup (100 g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 1/2 cups (315 g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (170 g) chocolate chips or chunks
  • Optional: 1/2 cup (60 g) chopped nuts (pecans or walnuts)

Instructions

1. Preheat Oven:
Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

2. Cream Butter & Sugars:
In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.

3. Add Eggs & Vanilla:
Beat in eggs one at a time, followed by the vanilla extract. Mix until smooth.

4. Combine Dry Ingredients:
In a separate bowl, whisk together flour, baking soda, and salt. Gradually fold into the wet mixture until a soft cookie dough forms.

5. Add Mix-Ins:
Fold in chocolate chips and optional nuts until evenly distributed.

6. Scoop & Bake:
Scoop 1.5-tablespoon portions of dough onto prepared baking sheets, spacing about 2 inches apart. Bake for 10–12 minutes, until edges are lightly golden but centers remain soft.

7. Cool & Enjoy:
Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack. Serve warm for maximum “peacekeeping” effect!
