A fresh chickpea feta avocado salad packed with creamy avocado, tangy feta, crisp vegetables, and a bright lemon olive oil dressing.

Ingredients

1 can chickpeas, drained and rinsed
1 avocado, diced
1/2 cup feta cheese, crumbled
1 cucumber, chopped
1 cup cherry tomatoes, halved
1/4 red onion, finely chopped
2 tbsp olive oil
2 tbsp lemon juice
Salt and black pepper to taste
Fresh parsley or mint (optional)

Instructions

  • Rinse chickpeas and place in a bowl.
  • Chop cucumber, tomatoes, and onion.
  • Dice avocado and add to bowl.
  • Add feta cheese.
  • Mix olive oil, lemon juice, salt, and pepper.
  • Pour dressing over salad.
  • Toss gently to combine.
