A fresh and healthy chickpea quinoa salad packed with protein, crisp vegetables, and a zesty lemon olive oil dressing perfect for lunch.

 

Ingredients

1 cup cooked quinoa
1 can chickpeas, drained and rinsed
1 cucumber, diced
1 cup cherry tomatoes, halved
1/4 red onion, finely chopped
1/2 bell pepper, diced
2 tbsp fresh parsley, chopped
3 tbsp olive oil
2 tbsp lemon juice
1 garlic clove, minced (optional)
Salt and black pepper to taste

Instructions

 

  1. Cook quinoa and let it cool.
  2. Rinse and drain chickpeas.
  3. Chop all vegetables.
  4. Mix olive oil, lemon juice, garlic, salt, and pepper.
  5. Combine quinoa, chickpeas, and vegetables.
  6. Pour dressing over salad.
  7. Toss well to combine.
  8. Add fresh herbs.
  9. Chill or serve immediately.

 

Notes

Cool quinoa before mixing to prevent sogginess. Adjust lemon and seasoning to taste. Store in fridge for meal prep.
