Smoky peri peri chicken served over fragrant seasoned rice for a bold, spicy, and satisfying homemade meal.

 

Ingredients

2 chicken breasts or thighs
2 tbsp peri peri sauce or seasoning
2 tbsp olive oil
2 cloves garlic, minced
1 tsp ginger, grated
1 tbsp lemon juice
1 tsp paprika
1/2 tsp chili powder
Salt and black pepper to taste
1 cup basmati rice
1 onion, chopped
2 cups chicken stock or water
Optional vegetables (peas, peppers, corn)

Instructions

 

  1. Mix peri peri sauce, oil, garlic, ginger, and spices.
  2. Marinate chicken for at least 30 minutes.
  3. Rinse and prepare rice.
  4. Sauté onion and optional vegetables.
  5. Add rice and cook with stock until fluffy.
  6. Grill or pan-sear chicken until cooked.
  7. Rest and slice chicken.
  8. Serve over rice.
  9. Drizzle extra sauce if desired.

 

Notes

Marinate longer for deeper flavor. Adjust spice level to taste. Rest chicken before slicing for juiciness.
