Santa Fe Salad is a fresh Southwestern-style bowl with seasoned chicken, beans, corn, vegetables, and creamy lime dressing.

Ingredients

2 chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups romaine lettuce
1 cup black beans
1 cup corn
1 cup tomatoes
1 avocado
1/3 cup yogurt or mayo
1 tablespoon lime juice
Optional cheese, tortilla strips, cilantro

Instructions

  • Season and cook chicken.
  • Slice or shred chicken.
  • Mix dressing with yogurt and lime.
  • Prepare lettuce and vegetables.
  • Add chicken and avocado.
  • Drizzle dressing.
  • Top and serve.
