Seasoned chicken served over rice with charred corn, creamy lime sauce, and fresh toppings inspired by street corn.
1 ½ lb boneless, skinless chicken thighs or breasts
2 tsp chili powder
1 tsp paprika
1 tsp cumin
½ tsp garlic powder
Salt and black pepper to taste
2 tbsp oil, divided
2 cups corn kernels
3 cups cooked rice
¼ cup mayonnaise
¼ cup sour cream or Greek yogurt
1 tbsp lime juice
1 clove garlic, minced
⅓ cup crumbled cotija or feta cheese
Fresh cilantro and green onions
Season chicken with spices and oil.
Cook chicken in a hot skillet until browned and cooked through; rest and slice.
Cook corn in the same pan until lightly charred.
Stir sauce ingredients until smooth.
Layer rice, chicken, and corn in bowls.
Drizzle with sauce and add toppings.
Black beans or grilled peppers can be added for variety. Sauce can be prepared a day ahead.
