Seasoned chicken served over rice with charred corn, creamy lime sauce, and fresh toppings inspired by street corn.

Ingredients

  • 1 ½ lb boneless, skinless chicken thighs or breasts

  • 2 tsp chili powder

  • 1 tsp paprika

  • 1 tsp cumin

  • ½ tsp garlic powder

  • Salt and black pepper to taste

  • 2 tbsp oil, divided

  • 2 cups corn kernels

  • 3 cups cooked rice

  • ¼ cup mayonnaise

  • ¼ cup sour cream or Greek yogurt

  • 1 tbsp lime juice

  • 1 clove garlic, minced

  • ⅓ cup crumbled cotija or feta cheese

  • Fresh cilantro and green onions

Instructions

  • Season chicken with spices and oil.

  • Cook chicken in a hot skillet until browned and cooked through; rest and slice.

  • Cook corn in the same pan until lightly charred.

  • Stir sauce ingredients until smooth.

  • Layer rice, chicken, and corn in bowls.

  • Drizzle with sauce and add toppings.

Notes

Black beans or grilled peppers can be added for variety. Sauce can be prepared a day ahead.
